A refill sherry cask was key to adding complexity and maturity to this very old Speyside whiskey, without forgetting the balance between the rich malty character of the spirit and the fruity and nutty influence of the Oloroso. So it is definitely a sherry whiskey, but without tannic and vinous excesses: the nose dances on a complex interaction between dry austerity and the scent of sultanas, between wine and malty freshness, between fragrant roasted chestnuts and old bookshelves. The taste remains clean, neither fat nor overly tannic, fruity but neither fat nor dusty, never dominated by the oloroso: it is spicy but also with a creamy note of candied orange. There is a note of aperitif bitter that contrasts well with the raisin-like sweetness, and only in the lingering aftertaste does it become very peppery, mineral, nutty.
