Mathew and Rachael Thomson create New Zealand whiskey from locally sourced ingredients that breaks new ground for the island nation's category. Starting out as independent bottlers, they founded their own small craft distillery in 2014 on the Hallertau Brewery site in Riverhead. With the help of two copper pot stills (1,900 and 1,000 liters), bourbon and wine barrels , they make reality what Mathew has been experimenting with on a small scale for years: rare single malts with a smoky aroma made from local Manuka wood and South Island peat.

Malt made from premium barley purely from New Zealand's South Island (Canterbury) is the basis for all Thomson whiskeys.

For the Manuka Smoke Single Cask #141, the smoky malt whiskey matured in an STR oak barrel pre-filled with New Zealand Pinot Noir . STR stands for “scraped” or “shaved”, “toasted” and “recharred” and refers to barrels in which the inner layer of wood has been thinly removed to increase the aroma before they are toasted and then burned out again on the surface.
