Eamon Jones and Aidan Smith of Fox Fitzgerald have dedicated their entire working lives to premium spirits. Over 30 years of wealth of experience and a vast network enabled them to launch their own brand. With close ties to the whisky island of Islay, they brought their first Rest & Be Thankful Single Casks to connoisseurs in 2012. These beginnings are now followed by seven single casks from the independent bottlers. Aged for between 12 and 20 years, the non-peated Bruichladdich as well as the peat-smoked Port Charlotte Islay Single Malt whiskies were matured in either a wine hogshead or a classic bourbon barrel.

The bridge between Islay and the small-batch bottlings from Rest & Be Thankful is built by the Finglassie 2017/2023. This Lowland Single Malt comes from the InchDairnie Distillery, which opened in 2015. North of Edinburgh, the distillery uses innovative methods to produce a fruity, pleasantly floral and grassy new make spirit – also from peated malt under the name Finglassie. Using Islay whisky casks and ex-Jamaica rum casks, Rest & Be Thankful has created an exciting whisky with peat, campfire smoke, candied orange, and tropical fruits.
