This new cask strength bottling of a classic Speysider takes full advantage of the extra year of maturation in a Pedro Ximenez cask, preserving all the raisin sweetness of the Spanish dessert wine. It is a floral whiskey with a pronounced fruity character: candied oranges, apricots and a hint of dried dates and figs. Full-bodied and slightly vinous on the nose, it has a buttery and full texture in the mouth: despite the high alcohol content, it remains smooth and creamy. The initial malty firmness with toasted grains and even a touch of beeswax is soon accompanied by a sweet, cakey sweetness, but the style becomes spicy and lively towards the end. Perfect as a dessert whiskey, however a little water will release its fresher and drier blood orange flavors.
