Im Anschluss wurde der Dalmore Single Malt dann in Oloroso-Sherryfässern unterschiedlicher Art gereift. Darunter Fässer, die mit Amoroso Sherry, seltenen Apostoles- und Matusalem Oloroso Sherry aus weltbekannten Bodegas per Hand ausgewählt und vorbelegt waren. Auch Fässer der legendären Gonzalez Byass Bodega sind dabei. Die Nachreifung in verschiedenen Arten von Oloroso-Sherry, verlieh dem 17 Jahre alten Highland Malt noch mehr Komplexität und dekadentere Aromen.
